These Baked Zucchini Fries are a great way to kick start the weekend. Served here with 2 dipping sauces because my son likes the marinara sauce, my husband likes Chipolte mayo, and I like both!

Baked Zucchini Fries
A healthy twist on the classic fry. Easy and so yummy!
Recipe type: Sides, snacks, veggies
Cuisine: Gluten-Free, Vegetarian
  • Zucchini, cut into ½ in thick sticks.
  • Eggs or egg replacer
  • Gluten-free Panko bread crumbs (we like Aleia's GF)
  • Parmesan cheese or vegan parm
  • ½ tsp salt or to taste
  1. To make "breading" combine equal parts Panko breadcrumbs and cheese, then add salt.
  2. Dip zucchini in egg, then breading and place on lightly oiled baking sheet.
  3. Bake at 425° for 18-20 minutes or until golden brown.
  4. Serve with your favorite dipping sauce.
