Moist, light and yummy!
If you have ripe bananas on hand (and for some reason I always seem to!), go ahead try this banana bread from my friend Leah at Grain Changer.
I made it the other week and plan to make another one tomorrow because… well lots of ripe bananas in the house! All joking aside, when I first made this, it didn’t last long! Everyone loved it (and I served it to several non-gluten-free family members and friends). It’s moist, light and has just the right amount of sweetness. We loved how the velvety smooth texture contrasted with the crunch from the walnuts.
If you’re nut-free, I think it would still be great! You could probably skip the chocolate chips if you’re like my son and prefer without, but I happen to be a fan of them!
