Recipe adapted from Vegetarian Times Magazine. It’s loaded with veggies — broccoli, mushrooms, onions, yellow pepper, grated carrots, cabbage and crispy tofu over brown rice (on occasion we add chicken for the boys or other meat-lovers who might be joining us).
