Tomato, Grilled Corn & Basil Pizza

A quick and easy dinner that celebrates end of summer produce

Every Thursday should be pizza night.

Seriously though, is there anything easier or more crowd pleasing for dinner? Tonight the boys had a classic cheese pizza and my husband I ate this Tomato, Grilled Corn, Basil, and Balsamic Glaze on a grilled Cali’Flour Foods cauliflower pizza crust.

Toppings combo inspired by Cooking Light, it was such a great way to enjoy the end of summer produce. And it was a highly satisfying meal with a balance of sweet corn, juicy tomatoes, tangy balsamic glaze (we used Monari Federzoni) and fresh basil.

It was also super quick and easy because I used a prepared Cauliflower pizza crust and prepared sauce (we tried Colvita for the first time and liked it a lot!)

This quick and easy dinner is a great way to enjoy summer and end of summer produce. I didn't really measure when I made this so just providing best approximations of ingredients and how I prepared it. Feel free to adjust to tastes

Ingredients
  • Cali'Flour Foods prepared Cauliflower Pizza Crust (classic italian or plant based)
  • ¼ -1/2 cup prepared marinara sauce (we used Colavita)
  • 1 large tomato or 2 small tomatoes, sliced
  • 1-2 ears corn, grilled and sliced off the cob
  • a handful or two of shredded mozzarella or dairy free alternative
  • Salt and Pepper to taste
  • Crushed red pepper, optional
  • Olive oil for drizzle
  • Balsamic Glaze for drizzle
Instructions
  1. Prepare the Cali'Flour Foods Pizza crust according to package or grill for 5 minutes to warm up
  2. Spread marinara sauce on the crust, leaving a ½ inch border
  3. Top evenly with tomatoes, mozzarella, and corn (reserve some corn for topping after cooking)
  4. Sprinkle with salt and pepper to taste
  5. Cook in a preheated 375 degree oven for 7-9 minutes or until cheese melts.
  6. Remove from oven and top with additional corn & fresh basil. Drizzle with olive oil and balsamic glaze.
