Up your everyday quesadilla game with our favorite Super Green... Swiss Chard
Quick, easy and delish!
I used to be unsure about what to eat for lunch but having to cook for my son who wants real food not snack food has turned lunch into one of my favorite meals. I’ve come to realize that anything goes, that a mix of leftovers and meal prepped veggies are the best starting points, and when all else fails make a quesadilla! Above all, I’ve learned that there’s room to be creative and that the key is to keep it really simple.
This Swiss Chard Quesadilla became one of our go to lunches over the summer when we had fresh swiss chard in the garden and continues to be a favorite which we have eaten all times of day!
Super quick and easy, is just swiss chard sautéed in olive oil with lots of garlic and salt & pepper to taste, a touch of your favorite shredded cheese (we love mozzarella with this one) and a gluten-free tortilla. (I used Siete Foods Almond flour tortilla). Serve with a side salad and some avocado and it’s an easy, filling meal.

4 gluten-free flour tortillas
1 bunch swiss chard, cleaned, stemmed and chopped
1-2 tablespoons olive oil
3-5 cloves garlic, minced
salt and pepper to taste
½ cup shredded cheese (we used mozzarella), divided
Heat olive oil in a large skillet over medium heat. Add garlic and sauce for about 30 - 60 seconds util until just fragrant.
Add swiss chard and saute for 5 -7 minutes, until is wilts. Season with salt and pepper to taste. Will look like a lot at first but shrinks considerably when it cooks. Remove from pan and set aside.
Remove pan from heat, wipe clean. Then heat again over medium heat.
Spray pan with cooking spray.
Lay one tortilla in the pan. Let cook 1 minute.
Spread ½ the swiss chard on tortilla. Then sprinkle with ¼ cup cheese or more to taste.
Top with second tortilla. Cook another 2-3 minutes.
Flip and cook second side 2 minutes or until golden and cheese melted.
