Summer Veggie Quinoa Bowl
 
Easy, quick and delicious! Great served warm or cold. So yummy!

Ingredients
  • 1 cup Quinoa
  • 1 yellow squash, diced
  • 1 cup broccoli , diced
  • 1 cup asparagus, diced
  • 1 avocado, diced
  • 1 small yellow onion
  • 1-2 garlic cloves, minced
  • olive oil
  • avocado oil
  • Salt
  • Pepper
Instructions
  1. Prepare Quinoa according to package instructions
  2. Heat olive oil & avocado oil in saucepan over medium heat
  3. Saute garlic cloves until just starting to brown
  4. Add squash, broccoli, and asparagus and saute until tender
  5. Season with salt and pepper as desired
  6. Mix cooked quinoa, sauteed veggies and diced avocado
  7. Serve warm or cold
