This recipe is from Vegetarian Times Magazine. It’s made with quinoa, fresh spinach, cucumbers, red onion, chickpeas, dried cherries and sliced almonds, all tossed in simple dressing made with EVOO, lemon juice, garlic & yogurt (I used coconut yogurt and it worked perfectly!).
