Easy, cozy and delicious!
After a busy day, there is nothing better than a warm bowl of pasta with vegetables. In fact it’s a crowd pleaser in this house, so we make many variations of it. Tonight it’s gluten-free spaghetti mixed with sautéed mushrooms, spinach and broccolini in a simple marinara sauce. This easy dinner is yummy, cozy and ready in less than 30 minutes.
This would also make an excellent Meatless Monday dinner. And if you eat dairy, this dish goes well with ricotta salata or a spoonful of ricotta the way my son likes it or even just some parmigiana cheese.
Tonight we used Barilla gluten-free spaghetti but you could also make add more protein by using one of several lentil or bean based pastas on the market.
