Skilling it on this Taco Tuesday! Skillet Rice and Beans with corn & tomatoes, topped with avocado. So good, I could eat this every day! This was super easy and a total crowd pleaser. The rice & beans are cooked together in vegetable broth, along with sautéed onion, garlic, cumin, coriander, and oregano for about 15 minutes. It’s then mixed with toasted corn and topped with a tomato salsa made with tomatoes, fresh lime juice, cilantro, scallions, a touch of EVOO. Lightly spinkle on some salt & pepper and that’s it! And it’s so flavorful & so fresh!
