Take your Roasted Vegetables up a notch and dip them in Lemony Tahini Sauce
Savory and Delish!
It’s no secret that I love roasted veggies and always have some in my fridge (in fact these were roasted yesterday). I like them warm, cold, in salads or on their own. But this Lemony Tahini Sauce, recipe from my friend, The Dish on Healthy, takes them to a whole new level.
The sauce is creamy, savory and packed with flavor! It’s just tahini, garlic, fresh lemon juice and sea salt but the proportions are just right.
This bowl of simply roasted Fall Veggies — Brussel sprouts, cauliflower, green beans and butternut squash –, 1/2 an avocado and tahini sauce was dreamy and the perfect start to the week.

1 carton or bag of Brussel sprouts, cut off ends and halve
1 carton sliced mushrooms
1 package pre-cubed butternut squash
1 package pre-cut cauliflower
1 bag green beans, ends trimmed
Lemony Tahini Sauce (recipe from The Dish on Healthy)
½ cup tahini
2 garlic cloves
3 tbsp freshly squeezed lemon juice
¼ tsp – ½ tsp of sea salt (according to taste)
¼ cup of warm water
Preheat oven to 400 degree F, and line baking sheets with parchment paper.
One type of vegetable at a time, toss vegetables in a small amount of avocado oil. Place in single layer on baking sheet. Sprinkle with salt and pepper.
Bake for: Brussel Sprouts 30-40 Minutes, or until crispy ; Butternut Squash: 30-40 minutes or until tender and slightly crispy, time depends on size of cubes; Mushrooms - 30 minutes or until tender; Cauliflower, 30-40 minutes or until tender and crispy on edges; Green Beans --20-30 minutes or until tender and crispy.
Lemony Tahini Sauce
Place garlic and salt in a food processor and process for 10-15 seconds.
Add all remaining ingredients & process until smooth, about 30-60 seconds. You may have to stop and scape down the sides.
Taste and adjust as desired. Add more water for a thinner sauce.
Enjoy with the Tahini Sauce served on the side for dipping or drizzled on top.
