All my Mother in law's go to holiday veggies including her "Famous" Roasted Tomatoes

Simple, Savory & Delicious!

We continued the holiday celebration with my in laws the last few days.    My mother in law loves to cook and host so there were many meals of roasted chicken, homemade soups, roasted potatoes and  lots of roasted veggies.

My plate here features a few of her favorites including Roasted Tomatoes, Sweet Potatoes, String Beans with optional garlic olive oil, and Roasted Zucchini.  I ate my veggies with a side of red pepper hummus and some Jilz Crackers.

Simply Roasted Holiday Veggie Plate
 
Simple and savory, this plate features my mother in law's favorite vegetables including her "famous" Roasted Tomatoes.

Ingredients
Roasted Tomatoes
  • 6 Organic tomatoes
  • ¼ tsp Salt
  • ½ c GlutenFree breadcrumbs
  • 1 Garlic clove, minced
  • 1-2 tbsp Fresh Italian parsley, chopped (put aside some for garnish if desired)
  • 2 tbsp Olive oil
Sweet Potato wedges
  • 2-5 sweet potatoes, cut into 1 inch wedges
  • olive oil
  • kosher salt
  • parsley for garnish
Roasted Zucchini
  • 2-3 zucchini, sliced into ¼ inch piece
  • olive oil
  • kosher salt
String beans
  • 1 bag frozen string beans
  • olive oil (Optional)
  • garlic (optional)
Instructions
Roasted Tomatoes
  1. Cut tomatoes in half & Sprinkle salt on them. let stand 30 min to release water.
  2. Preheat oven to 375°.
  3. Bake tomatoes 20 minutes.
  4. Meanwhile mix bread crumbs, garlic, parsley, & olive oil.
  5. Remove tomatoes from oven & cover tomatoes with bread crumb mixture.
  6. Bake another 15 min or until topping is golden brown. (optional, instead of baking 15 minutes, broil for 5 but need to watch closely so as not to burn
Sweet Potatoes & Zucchini
  1. Preheat oven to 400 degrees.
  2. One vegetable at a time, toss lightly with olive oil, place in single layer on baking sheet, sprinkle with salt.
  3. Bake 30 minutes or until tender and crispy.
String Beans
  1. Bring a large pot of water to a boil. Add frozen string beans. Bring to a second boll and cook 5-8 minutes until crispy tender.
  2. Optional: While beans cook, in a small sauce pan, heat olive oil and sauté garlic cloves or slices. Toss cooked beans with garlic olive oil.
