Raw Veggie Hummus Bowl
Easy, quick & delish!
When it’s nearly 90 degrees and humid, sometimes the best meals are the ones that require cooking! Ok, I cooked a little if you count making a quick hummus in my Cuisanart for about 5 minutes, but you could also use a store-bought hummus.
This bowl is like having the entire crudite plate to yourself! It’s hummus, carrots, broccoli, grapes, purple cauliflower, tomatoes, olives, avocado and Terra chips. You could really make this with whatever vegetables you like or have on hand. I like to mix of the textures and flavors — the crunch of carrot, broccoli and cauliflower, the creaminess of avocado, savory olives, juicy grapes & tomatoes and salty chips. Easy, quick and delicious!

Easy Basic Hummus

- 1 can chickpeas, rinsed and drained
- ½ c tahini
- 3 tbsp fresh lemon juice
- ¼ cup water
- ½ tsp cumin
- 1 clove garlic
- ½ tsp salt
- ¼ tsp pepper
- 3 tbsp olive oil
- Place all the ingredients except the olive oil in a food processor. Add the olive oil by streaming while mixing.
- Process until smooth and creamy.
- Adjust to tastes as desired.
