A simple and savory green salad that is the perfect accompaniment just about to any meal...

Festive and Delish!

This is one of our favorite salads to accompany a big holiday dinner.  It’s easy to prep, short on ingredients but big on flavor!

Radicchio, Arugula, walnuts, dried figs and grated pecorino tossed in a Honey-Lemon-Coriander  dressing.   Savory and delicious is goes with just about any meal.

Radicchio & Arugula Salad with Dried Figs, Walnuts & Pecorino

Ingredients
Dressing
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • ½ teaspoon dried coriander
  • ¼ teaspoon salt
  • ⅓ cup olive oil
Salad
  • 1 medium head radicchio sliced in ¼ inch thick ribbons (about 6 cups)
  • 1 5 oz container arugula, approximately 4 -5 cups
  • 1 cup walnuts
  • ¾ cup dried figs, stemmed and sliced
  • ½ cup grated pecorino
Instructions
Dressing
  1. Whisk together lemon juice, honey, coriander, and salt in small bowl. Gradually whisk in oil, Season with salt and pepper as desired.
Assemble Immediately before serving
  1. Toss radicchio, arugula, and walnuts with two-thirds of dressing.
  2. Add figs (reserving a few for garnish) and cheese. Add more dressing if desired. Toss. Top with remaining figs.
  3. Serve & Enjoy!
