Fresh & Citrusy
This may be my favorite new quinoa salad for Spring. The recipe is adapted from Food & Wine. It’s two types of quinoa mixed with caramelized onions, dried apricots, pistachios, arugula and the yummiest citrus vinaigrette! The vinaigrette is mostly orange flavored with a touch of lemon, so it’s not too sweet and it’s so good! A little extra orange zest on top make it extra pretty.
This is a front runner for my Easter table at the moment…
