High flavor & high protein

After eating out a bunch the last few days, we are enjoying the gorgeous weather and grilling tonight. This shot from a few weeks ago is inspiring my dinner.

Baked Quinoa Black Bean Burger, recipe from Simply Quinoa, with smashed avocado, tomato, red onion & lettuce on an Udi’s Gluten-free bun.

The burger itself is made with black beans, quinoa, shallot, garlic, 1 egg white and lots of spices- chili powder, cumin, lime zest & juice, and Sriracha, it’s high flavor & high protein.  It was really easy to make and made a large quantity.

I could pretty much eat this all summer long!
