It was a gorgeous 80 degree day here but couldn’t let the Fall Equinox pass without a nod to Fall baking and all the yummy flavors coming our way. So we made a batch of one of our favorites… Pumpkin Chocolate Chip Cookies.
Recipe from Pretty Bee Blog, they are thick, chewy, packed with chocolate chips and have just the right amount of pumpkin spice. In fact they are perfectly spiced with cinnamon, nutmeg, ginger and cloves so that there is a hint of fall and pumpkin spice but still enough chocolate chips to taste like a classic chocolate chip cookie.
We’ve been making these cookies for several years now and whereas I usually adapt recipes and make changes along the way, I’ve always followed this one to the letter and each time they are better than I remember.
And did I mention that they are gluten-free and vegan? Pumpkin is one of those great ingredients that adds moisture and flavor to gluten-free baking. No one knows they are gluten-free or vegan, all they know is that they are delicious.
