I love having a stash of healthy-ish treats in the freezer and have been wanting to try these Peanut Butter Chocolate Truffles from my friend Gal @holyhealth for some time.

What better excuse that National Peanut Butter Day?

Peanut Butter + Sea Salt Truffles

Ingredients
  • 1 cup Natural Peanut Butter
  • ¼ cup pure maple syrup or honey (I used maple syrup)
  • 1 tablespoon coconut oil, melted
  • 1- 1½ cups dark chocolate chips (I used Enjoy Life Foods Dark Chocolate Morsels)
  • Sea Salt for sprinkling
Instructions
  1. Mix peanut butter, maple syrup and coconut oil until well combined and thick.
  2. Freeze at least 20 minutes to harden. (When doubling recipe,needs to freeze longer)
  3. Roll into balls and freeze another 15-30 minutes (I actually froze them overnight because of my schedule and it worked well)
  4. Melt dark chocolate in a double boiler (my preference), on stovetop or in microwave.
  5. Dip "frozen" peanut butter balls in chocolate (I found kitchen tongs worked well)
  6. Sprinkle with sea salt.
  7. Freeze an additional 10-15 minutes or until firm.
  8. Store in Freezer.
