To say my son LOVES these savory gluten-free Corn Fritters is an understatement. He eats them as often as I will make them and sometimes, he just makes them himself (He makes the batter, I fry them), so they end up being part of our, or at least his, weekly rotation.
Perfect crunch on the outside and irresistible light, moist & airy inside. Just like fresh bread, but so much easier and quicker to make, they are melt-in-your-mouth yummy!

½ cup All Purpose Gluten- Free Flour (we use GF Jules)
1 tsp baking powder
⅓ cup fat free milk
1 egg, beaten
1½ cup fresh or frozen corn kernels
⅓ cup finely chopped green onions
¼ tsp salt
¼ tsp pepper
Olive oil for frying
Combine flour and baking powder in a large bowl.
Add egg and milk, mix well until smooth
Stir in salt, pepper, corn and green onions
Heat olive oil in a large non stick skillet or frying pan heated to 350 degrees. Drop batter in spoonfuls onto hot oil to make 6 fritters.
Cook approximately 3 minutes and flip. Slightly flatten fritters with the back of the spatula. Cook another 5 minutes until golden .
