Savory, Nourishing and Delicious!
I didn’t have time for a lot of meal prep today but did manage to make a few basics… Quinoa, Hummus and breaded chicken (well, actually my husband made the chicken).
Then I used part of the cooked quinoa to literally whip together this quinoa salad which is definitely going to be on repeat. Recipe from Foodie Crush, it’s quinoa, arugula, chickpeas, finely chopped red peppers, olives & red onions (my add because I love them), crumbled feta, and lots of fresh basil, tossed in a garlicky Balsamic Dressing with fresh thyme. Simple ingredients that come together in one delicious salad! Seriously, between the finely chopped veggies and the mix of flavors, this salad was so yummy!
It is a perfect simple and hearty salad, great on its own, as a side dish or with an additional protein mixed in.
