Lemony Cheesecake Squares with Raspberry Swirl

Ingredients
Graham Cracker Crust
  • 1 5.6oz box Schar Gluten-Free Honeygrams, finely ground into crumbs using a food processor (or approximately 1½ cups)
  • 2 tablespoons sugar
  • 3 tablespoons butter, melted
Filling
  • 2 8 oz bars cream cheese, room temperature
  • ¾ cup sugar
  • 2 large eggs
  • Finely grated zest of one lemon (2 to 3 teaspoons)
  • Fresh lemon juice of one lemon (about 3 tablespoons)
2-3 tablespoons Raspberry jam or spread
Instructions
  1. Preheat oven to 325 degrees and line an 8 inch baking pan with parchment paper
Graham Cracker Crust
  1. Add ingredients in a small bowl and mix until well combined and "moist". Add mixture to lined baking pan and gently press into pan. Set aside.
Filling
  1. Place cream cheese in a large mixing bowl and using an electric mixer, blend until very smooth. Add sugar, eggs, lemon zest, and lemon juice. Mix until well combined and smooth.
  2. Pour mixture onto crust in pan. Use a spatula to smooth the top.
Raspberry Swirl
  1. Place jam in a small bowl and stir until jam loosens and becoming thinner.
  2. Drop jam by spoonfuls over cream cheese mixture; swirl gently using tines of a fork. You can add more or less jam according to tastes.
Bake
  1. Bake 30-35 minutes or until set (filling should jiggle only slightly when pan is gently shaken).
  2. Cool completely in pan. Cover very loosely with wax paper or plastic wrap and chill until firm (about 2 hours, though I left mine overnight because of timing).
  3. Gently lift the parchment paper and squares from the pan. Gently pull parchment paper away from sides. Cut into 16 squares.
