It’s the best of summer… grilled pizza and fresh caprese salad and it’s so quick and easy to make using Cali’Flour Foods cauliflower pizza crust. I grilled the prepared pizza crust for 5 minutes, then added basil pesto and melted fresh mozzarella all while roasting the tomatoes quickly for 10 minutes. Top the pizza with the roast tomatoes, fresh basil and balsamic glaze and it is melt in your mouth delicous!

1 Cali'flour Foods Cauliflower Pizza Crust
Approximately 1 cup fresh tomatoes (cherry tomatoes, halved or full size sliced or a combination)
Fresh mozzarella, 6-8 slices depending on taste
1 few spoonfuls of prepared pesto
Prepared Balsamic glaze (we used Monari Federzoni balsamic glaze)
Handful of Fresh Basil, chopped
Preheat oven to 400 degrees. Gently toss tomatoes in olive oil and a dash of salt. Place in a single layer on a baking sheet and roast for 10 minutes.
While tomatoes roast, grill the prepared pizza crust for 5 minutes, flipping once (I used an indoor grill pan because it was easier for me)
Add the pesto to pizza crust, then fresh mozzarella and melt the fresh mozzarella, approximately 5 minutes. Remove from grill.
Top the melted cheese with the roasted tomatoes, balsamic glaze and fresh basil.
