Sushi recipe based on Minimalist Baker sushi recipe. I used sushi rice instead of short grain brown rice and different fillings but I found her sushi rice recipe easy and tasty and she had many good tips on rolling sushi for first timers like me!
Rolling with it!
We are big fans of vegetable sushi and eat it often. In fact, I would say it’s one of my go to meals when we are out and about. However, until recently, I have never made it myself. I was always intimidated. For the holidays, I received a sushi mat and rolling kit so I decided it was time to finally give it a try.
I followed the basic recipe from Minimalist Baker and couldn’t have been happier! The first roll I made came out so good I thought, “wow this is easy!”. I have since realized that I need a bit of practice to learn the correct amount of rice to filling ratio and how to roll tightly. But I am happy to practice because it tastes amazing and fresh no matter what it looks like! And I love that I can play with the fillings and add whatever I have in the house or am craving. Or as in this case, make my son a simple cucumber roll.
So if you’ve never made your own sushi either, definitely give it a try!
