Cauliflower & Citrus Salad with Orange Tahini Dressing
A simple Spring salad that packs a punch with nutrients and flavor

While I was under the weather last week, I still had an appetite. That’s when I remembered this yummy salad adapted from SuperFood Magazine that I first made last summer. I was craving all the Vitamin C and this salad packed with juicy oranges, grapefruit and pomegranate was just the answer.
Raw crunchy cauliflower, juicy orange slices, grapefruit slices, pomegranate seeds and walnuts on a bed of lettuce, topped with Orange Tahini Dressing and hemp seeds. Perfect for a light lunch or side salad.
Recipe adapted from SuperFoods Magazine, it takes minutes to assemble, another 5 minutes to mix a dressing and it's so fresh and yummy! From the original recipe, I added in grapefruit (in addition to the orange slices) and hemp seeds for some extra nutrients.

1 cup Raw Cauliflower, sliced thin
1 5 oz box mixed greens
1 large orange peeled and sliced
½ grapefruit, peeled and sliced
3 tbsp pomegranate seeds
3 tbsp chopped walnuts
2 tbsp hemp seeds
4 tbsp tahini
4 tbsp orange juice
4 tbsp lemon juice
salt to taste
Whisk all ingredients together, adjust to taste
Assemble the salad starting with the mixed greens, then adding the cauliflower, orange & grapefruit slices, pomegranate seeds, walnuts and finally the hemp seeds. Drizzle with dressing.
