Veggies on veggies on veggies!

“Pasta” Primavera with Zucchini Noodles because after a weekend at son’s baseball tournament, I needed veggies on veggies! Broccoli, Yellow Squash, Mushrooms, Onions, and Asparagus in a Tomato Marinara base & topped with Parmigiana & fresh Basil. So yummy! Easily adaptable to tastes. Can be dairyfree and vegan by merely not topping or substituting the Parmagiana. Or as my boys did, enjoy with glutenfree pasta and less veggies. 🙂

Zucchini Noodles Primavera
 
So yummy! Easily adaptable to tastes. Can be dairyfree and vegan by merely not topping or substituting the Parmagiana. Or as my boys did, enjoy with glutenfree pasta and less veggies. 🙂

Ingredients
  • 2-3 tbsp olive oil
  • 2-3 garlic cloves, minced
  • 1 container Crushed Tomatoes (we use Pomi 26.46 oz)
  • 1 6oz can tomato paste
  • Fresh basil
  • Salt & pepper to taste
  • 1 yellow squash
  • 1 package chopped broccoli
  • 1 package mushrooms, chopped
  • 1 yellow onion, diced
  • 1 bunch asparagus
  • Zucchini noodles or pasta
Instructions
  1. Heat olive oil in large sauté pan
  2. Sauté garlic in olive oil 2-3 min until just starting to brown
  3. Add Crushed Tomatoes, tomato paste & fresh basil, salt & pepper to taste
  4. Simmer while you prep other veggies
  5. Add veggies & cook up 10-15 minutes or until tender
  6. Serve warm over zucchini noodles or pasta
