Easy like a Friday evening! I don’t about about you… but by the time Friday hits, I am beat & don’t want to prep an elaborate meal. This simple Veggie Quinoa Stir Fry is perfect — an easy, delicious and cozy bowl of tastiness that wraps up a busy week and makes a perfect cozy Friday evening dinner!

Veggie Quinoa Stir Fry
 
I make this often but with no "real" recipe. Best part is any leftovers taste great cold the next day. The perfect way to start off a great weekend!

Ingredients
  • Onion
  • garlic
  • Veggies (This time I added broccoli, cauliflower & carrots)
  • Oil (I use a combination of avocado and sesame oil for sautéing)
  • avocado
  • scallions
  • pistachios
Instructions
  1. Sauté onion until translucent in oil.
  2. Add minced garlic and veggies
  3. Make the quinoa separately according to the package
  4. Add it to the veggies at the last minute
  5. Season with salt & pepper to taste.
  6. Topped with avocado, scallions and pistachios, it is delish!
