Veggie Fried Rice for a Friday night win! At the end of a long week and with the weather suddenly turning cold, throwing rice and veggies into a pan with some seasoning was definitely the best soul food!

The thing we love about fried rice is it’s so versatile. I follow a basic “recipe” but really add in whatever we have in the fridge. Tonight it’s onions, broccoli, snow peas, carrots, and mushrooms, all stir fried with brown rice. So yummy! And now we are ready for the weekend! Hope everyone has a nice evening.

Vegetable Fried Rice loaded with Greens
 
The thing we love about fried rice is it's so versatile. I follow a basic "recipe" but really add in whatever we have in the fridge.

Ingredients
  • Sesame oil
  • 1 onion
  • 
3 cloves garlic, minced
  • 2-3 tbsp gluten free tamari
  • 1 tsp rice wine vinegar
  • 3-4 c chopped veggies (broccoli, snow peas, carrots, mushrooms, greens)
  • Approx 2 cups cooked brown or white rice
  • 
Optional add ins: cooked chicken, tofu, egg, nuts or seeds
Instructions
  1. In a large skillet, heat 1 tbsp sesame oil.
  2. Sauté onion until soft & translucent.
  3. Add in garlic. Sauté till fragrant about 30 seconds.
  4. Add in tamari, rice wine vinegar, and an extra tbsp sesame oil.
  5. Then add in veggies & sauté until tender, about 5-10 minutes.
  6. Add in rice and mix well, let rice heat up, add seasoning as needed and serve!
