My favorite kind of meal

All the vegetables and none of the work because we meal prepped yesterday! Roasted brussel sprouts, summer squash and red peppers, spicy pickled cucumbers (my new favorite), marinated artichokes, olives, quinoa tabbouleh and a big scoop of hummus all on a bed of greens.

Perfect dinner on this fine Meatless Monday!

All vegetables roasted at 400 degrees for approximately 30 minutes, or until tender and crispy
The Quinoa Tabbouleh recipe is adapted from Ina Garten (I skipped the mint and feta this time and it was still delicious).
