My favorite kind of meal
All the vegetables and none of the work because we meal prepped yesterday! Roasted brussel sprouts, summer squash and red peppers, spicy pickled cucumbers (my new favorite), marinated artichokes, olives, quinoa tabbouleh and a big scoop of hummus all on a bed of greens.
