A quick and awesome salad!
Leftovers have never made me so happy! When I’ve been running around all morning, to be able to come home and quickly assemble an awesome salad with all the goodness from last night’s meal just makes my day.
I start with the vegan falafels, hummus & quinoa, add avocado, some roasted cauliflower (the falafel base is a broccoli/cauliflower rice so I roast the extra the night before). Then I add lots of radish, roasted chickpeas and pomegranate.
