Chilling out at the end of the holiday break before everyone heads back to school and work, this Vegan Chili with Cornbread Croutons is for me and my husband, with breaded chicken and cornbread for the boys.

This chili is one of our favorites! Packed with flavor and nutrients, it’s really hearty. The best part is it tastes even better the second day — a good thing since we already know we have a busy day tomorrow, and we’ll be eating the extra!

It’s easy to make and so delicious, and the homemade gluten-free corn bread croutons are a huge hit with the family! The soup itself is vegan and grain-free (without the croutons).
