Light & refreshing!
Summer may be a month away but these 90 degree days have me craving my favorite summer salads!
This Tropical Salad is perfect. Light, refreshing and super yummy. Recipe adapted from The Plantiful Blonde, it’s simply an assortment of fresh tomatoes, juicy mango, avocado and jalapeño (which I forgot to add until after I’d taken this photo, but is a great add if you like a little heat and crunch to contrast the other ingredients!) with basil and a touch of salt, pepper & EVOO.
It’s also quite adaptable. You could easily add more or less of any ingredient you love and subtly change the flavor. Any way you make it, it is like a taste of summer!

Tropical Summer Salad
Recipe inspired by The Plantiful Blonde:
Here are the basics, adjust to taste:
- One avocado
- A mix of tomatoes (this time I used cherry tomatoes, halved)
- 1 fresh mango, peeled and cubed
- 1 jalapeño, sliced (missing from my photo)
- A handful of fresh basil
- Sea salt and pepper and EVOO to taste
