After what seemed like days of rain, the sun was finally shining bright yesterday so we grilled burgers of the boys and my husband and I tried these new-to-us Fully LOADED Quinoa Black Bean Burgers… and no words, it was THAT good!

I’m always on a quest for the perfect veggie burger and this Baked Vegetarian Black Bean Quinoa Burger, recipe from Simply Quinoa, is a really good one!  Especially when served fully loaded with smashed avocado, tomato, red onion and lettuce on an Udi’s Gluten-free bun.

Made with black beans, quinoa, shallot, garlic, 1 egg white and lots of spices- chili powder, cumin, lime zest & juice, and Sriracha, it’s high flavor & high protein.. And it was really easy to make and made a large quantity which means that not only did my husband and I enjoy them last night, we’re eating them today too 🙂
