Over the weekend, I tried several new side dishes for Spring… 3 new quinoa salads and asparagus with balsamic tomatoes. One was better than the next! They were all easy to make, made large quantities, and all would work perfectly for Easter, Passover or any time!
Lucky for me, I now have lots of salads in my fridge to choose from! So tonight it’s the Farmer’s Market Quinoa Salad (recipe from Bon Appetit), Asparagus with Balsamic Tomatoes (recipe from Cooking Light), homemade hummus (recipe from Minimalist Baker) and avocado for good measure! This bowl is fresh, light and full of Spring goodness!
