Spinach, Mushroom & Feta Tart

This could very well be the BEST savory tart I've ever made

Savory and melt-in-your-mouth yummy!

If you’ve been following me for a while, you know that we’ve managed to replicate nearly all of my celiac son’s favorite “gluten foods” except the spinach pie.  We’ve come close and have made many things he loves but we’ve never found anything to replicate phyllo dough.

So when my friend Jackie Ourman shared her Spinach Feta Tart and said it was close to the Spinach Pie she grew up enjoying, I knew I had to try it.  It did not disappoint!

Think hearty mushrooms & shallots sautéed in butter and olive oil along with a little garlic, wilted spinach, crispy roast potatoes, just one egg and a handful of feta all in a gluten-free puff pasty dough from GeeFree Foods.  Every bite is a sheer delight!

We loved this at Easter and enjoyed the leftovers this week.  It was super easy to make and would be great for a bunch or as part of meal prep so that you can enjoy it during the week.
