Shrimp Marinara over Spaghetti
 
Sunday night pasta at the shore, shrimp marinara over gluten-free spaghetti — because it's an easy way to feed a hungry crew!

Ingredients
  • 2 tbsp olive oil
  • 2-3 garlic cloves, minced
  • 2 containers chopped tomatoes (we use Pomi 26.46 oz, and you can also use strained tomatoes instead of chopped, depending on tastes)
  • 1 6oz can tomato paste (we use Tuttorosso because it's GF)
  • Lots of fresh and dried basil (we use approx 1 tbsp)
  • Salt and pepper to taste
  • Optional: crushed red pepper
Instructions
  1. Heat olive oil in large sauté pan
  2. Sauté garlic in olive oil 2-3 min until just starting to brown
  3. Add tomatoes, tomato paste and basil
  4. Add salt and pepper to taste
  5. Simmer sauce at least 30 minutes (can be made ahead)
  6. When ready to eat, prepare spaghetti according to package
  7. Cook cleaned shrimp in the sauce for 5-7 minutes until tender
  8. Serve shrimp warm over pasta (we use Barilla US gluten-free spaghetti)
