Savory Marinated Grilled Veggies
I combined broccolini, portobello mushrooms, zucchini and eggplant, all marinated in a sweet-spicy marinade for 5-10 minutes, then grilled.
The marinade is adapted from a Minimalist Baker stir-fry recipe made up of minced garlic, minced ginger, red pepper flakes, maple syrup, gluten-free tamari, sesame oil and lime juice.
