Best part of a long weekend is starting the week on Taco Tuesday!
These Roasted Cauliflower & Chickpea Tacos were the perfect back to school dinner. Recipe from Two Peas & Their Pod, these healthy tacos were super easy to make and beyond delicious. Literally toss the cauliflower and chickpeas with lots of spices (chili powder, cumin, garlic powder, onion powder, sea salt) some fresh lime juice & olive oil and roast them on the same pan for 30 minutes.
Topped with diced avocado, chopped red cabbage, jalapeño and lime cream made with Kite Hill Greek Yogurt, they are high in flavor, the perfect amount of spicy — and so good!
