Last Night’s Mighty Veggie Burger + Assorted Sides

Meal Prep at it's best!

Many people ask how I cook when I have such a busy schedule with my boys….  The reality is I make time to cook because my son has food restrictions and I personally prefer fresh cooked food BUT…. I always plan ahead based on the boys’ after school schedule and I always make large quantities so that I can either freeze extras or have it for the next day or two.   So if you pay attention to my posts you’ll notice that when I’m around, I like to cook a big meal on Sundays so that it doubles as meal prep for Monday and even Tuesday.

This week is no different…. Tonight I grilled burgers for the boys (extra from last night) and I ate a this yummy bowl made with yesterday’s Mighty Veggie Burger topped with sriracha aioli and a dab of Ozuke Kraut, yesterday’s Feta-Herb-Edamame Succotash, plus avocado, tomatoes, cucumbers, sprouts and some grapes just because it’s so hot outside and they were so fresh and juicy!

Veggie Burger recipe from Minimalist Baker, it’s super easy to makes 5.  It’s vegan and made with brown rice, black beans, walnuts, onions and lots of spices!  Succotash. recipe from Cooking Light, is also super quick and makes a large quantity.

Sriracha aioli:

  • 1 tsp sesame oil
  • 3 tbsp canola or Vegan mayonnaise
  • 1½ tsp Sriracha
