Granola Cups with Berries & Yogurt

Starting to feel festive with these red, white and blue grab & go healthy goodies

Easy and delicious!

To be honest, the first few days of summer have been a bit of a whirlwind.  I spent last weekend at my oldest son’s baseball tournament, I enjoyed a city day with my youngest, and I’m flat out exhausted trying to get work done in between.  So I need my cooking time to be maximized more than ever, which for me means quick and easy recipes that make large quantities of healthy, versatile dishes.

These Granola Cups hit that goal out of the park!  Easy to make, the recipe doubles easily to yield 12 full size “muffin cups” or 24 minis, and they are totally versatile working as breakfast, snack, dessert and being easily filled with any flavor or style yogurt and any topping.  Equally important to me, the are made with only 6 ingredients (gluten-free oats, mashed banana, honey, almond extract, cinnamon and a touch of salt) which fits my desire to eat really simple food at home to balance out all the eating out we’ve been doing.

Recipe from From Milk to Meat, we make the granola cups ahead of time and filled them whenever we were ready to eat.  The granola cups stay well in the fridge for several days so we could literally grab them, fill with our favorite yogurt (I chose almond milk yogurt, my son coconut milk yogurt and my husband Greek yogurt!) and top with whatever fruit or berries you like.

As an added bonus, topped with fresh berries, they are making me feel all summery and ready for the holiday weekend!

We made the in both full size and mini muffins tins.  Both worked well.  And we made one batch substituting vanilla extract for almond extract.  Again, both worked well.
