Remember my grandmother’s peach cake we made this summer? Well, we used the same simple recipe to make this amazing Dutch Apple Cake.

This is a simple six ingredient cake, topped with apples, a dash of cinnamon and sugar and baked to perfection. The beauty of this light “cake” is that it’s not sweet, and highlights the fruit of the season. It’s a family favorite that works well as dessert, snack or… you could even eat it for breakfast… I won’t tell.

Dutch Apple Cake
 
This is a simple six ingredient cake, topped with apples, a dash of cinnamon and sugar and baked to perfection. The beauty of this light "cake" is that it’s not sweet, and highlights the fruit of the season.

Ingredients
  • 2½ cups gluten-free flour (I use GF Jules)
  • 3 tsp gluten-free baking powder
  • 1 tsp salt
  • 4 tbsp sugar
  • ½ cup butter
  • ½ cup milk
  • 2 unbeaten eggs
  • Cinnamon & sugar for sprinkling
  • 6-8 sliced apples (depending on size)
Instructions
  1. Sift or mix together dry ingredients.
  2. Add butter, eggs & milk by hand into flour mixture - the batter should be rather stiff
  3. Drop batter onto greased 9" or 10" pie pan by spoonfuls (if doubling the recipe, use a cookie sheet)
  4. Place sliced apples into the dough, pushing gently
  5. Sprinkle with sugar and cinnamon
  6. Bake at 400 degrees for 40-45 minutes
