Crispy Avocado Tacos with Roasted Red Pepper Crema

So simple, yet so delicious!

Oh YES I did! Crispy Avocado Tacos with Roasted Red Pepper Crema on this Taco Tuesday.

Recipe from This Mess is Ours, these will definitely be on repeat. Avocado, breaded in panko and fried, in a corn tortilla with refried beans & shredded lettuce, then topped with pico de gallo and homemade roasted red pepper crema.

Sounds fancy but the only real “work” was breading and frying the avocado which went pretty quickly.  The refried beans and pico de gallo were ready-made.  Plus I used jarred red peppers rather than roasting my own to save time making the crema.

The crema was a real treat itself with just enough kick to balance out the avocado.  It is dairy-free and made raw cashews, cashew milk, roasted red peppers, garlic, cilantro, red onion and lime juice.
