Easy, Healthy and Delicious!
As we wind down our vacation, we all ate different things for dinner with some doing takeout & some clearing out the fridge. This was my plate: Mediterranean chickpea salad, sautéed garlic mushrooms, avocado, Organic Girl Super Greens and Jilz gluten-free crackers. So good!
Seriously, I’m totally in love with this chickpea salad inspired by my good friend Aleyda at The Dish on Healthy. Chickpeas, fresh tomatoes, marinated artichokes, sun-dried tomatoes and lots office fresh basil, parsley & chives all tossed in a yummy lemon-red wine vinaigrette. Definitely try her recipe & I’ll share my adaptation of it when I get back home & actually measure what I did.
