A Favorite Aztec Salad!

This dish throws it back to that summer day when I recreated my favorite Aztec Salad from Candle Cafe. We were having an assortment of leftovers that night, but I’d been dreaming about this bowl all day. (Wishing it were on my table right now!)

Aztec Salad
 
Words can not describe how yummy this salad is!

Ingredients
  • quinoa
  • black beans
  • carrots
  • corn
  • cherry tomatoes
  • roasted pumpkin seeds
  • barbecued grilled tempeh
  • avocado
  • lettuce (in our case, the lettuce did come fresh right from our garden!)
  • toasted cumin dressing
Instructions
  1. On top of lettuce, add quinoa with black beans, carrots and corn, cherry tomatoes, roasted pumpkin seeds, barbecued grilled tempeh and avocado.
  2. Dress with toasted cumin dressing
