Autumn Quinoa Salad
 
I got this recipe from a friend, and it was also super easy to make!

Ingredients
  • 1 cup quinoa
  • ½ cup dried cranberries
  • 2 tbsp EVOO
  • 2 cups onion, thinly sliced
  • 2 tsp fresh sage, chopped
  • ½ cup slivered almonds
  • 1 tbsp lemon juice
  • Salt and pepper to taste
Instructions
  1. Rinse quinoa
  2. Combine with cranberries, quinoa and 2 cups of water in a saucepan
  3. Bring to a boil
  4. Immediately reduce heat, cover and simmer for 12-15 minutes or until liquid is absorbed
  5. Meanwhile, heat 1 tbsp oil in a large skillet over medium heat
  6. Add onions and cook, stirring occasionally until soft and golden brown, approx 12-15 minutes
  7. Remove from heat and stir in sage
  8. Mix together remaining 1 tbsp oil, almonds and lemon juice
  9. Add dressing to quinoa
  10. Season with salt and pepper
  11. Toss with onions and sage
